Directions
• Chop the eggs, milk, salt, pepper, corn, chopped peppers, and sausage in a bowl.
• Melt the butter in a pan over medium heat, and then add the egg mixture.
• Begin poaching the eggs, cooking by stirring constantly and scraping the cooked eggs on the bottom of the pot. Continue to scramble the eggs until they are cooked.
• Stir in the salsa and serve.
Egg Foo Yung with Chinese Vegetable
What do you need?
6 eggs
3 tbsp chopped green onion
tsp salt
tsp black pepper
1 tbsp vegetable oil
2 cups of frozen vegetables
2 tbsp soy sauce
Directions
• Preheat the oven to 350 ° F *
• Eggs with green onions, salt and black pepper.
• Heat oil in a hot oven over medium heat. Add the vegetables and stir-fry until soft. Add soy sauce.
• Pour the eggs over the vegetables and transfer to the oven and cook for 15 minutes.

Eggs Rancheros with Black Bean Sauce
What do you need?
1 tbsp vegetable oil
cup diced onion
1 tsp minced garlic
cumin earth
salt
black pepper
1 can of black beans

1 cup of shredded Monterey Jack Cheese
4 tortillas
8 poached eggs
Directions
• To poach the eggs, lightly boil the salt water for about 2 inches and then reduce the heat. Break each egg one by one into a measuring cup, and then slowly pour the egg into the water. Cook for about 3 to 4 minutes. Use a slotted spoon to remove the poached eggs from the water.
• Heat the oil over medium heat in a pan, add the onion and cook until tender.
• Then add cumin, garlic and black pepper and cook for about a minute.
• Add the black beans and salt and bring to a boil. Add the cheese and stir until melted.
• Sprinkle the beans over the tortillas and add 2 poached eggs on top of each tortilla.
