One of my biggest challenges on the road is what to eat on the road. It’s true, my husband can’t wait to ride all day without a bite. But I have to eat something every few hours. Therefore, I learned a few things about the moment.
Bananas, oranges, nuts or other MO treats, but I like a little more variety. Reminds me of the kid’s journey. My parents (or sometimes my grandparents) would buy us something really special for lunch on field trips . We think about that meal all day long, waiting for the appointed time to eat. As an adult, I want the same feeling when I am carried away. So here are a few good recipes I like. They take some time to prepare, but they are worth it.
Dark Chocolate Bark
It’s a cold chocolate for me. Put milk, white and dark chocolate in front of me, and I always choose darkness. To me it has a richer and decadent flavor than the others. Before the trip, I made myself a dark chocolate treat, or bark. If you are not a fan of dark chocolate, you can use white or milk chocolate instead.
What do you need?
12 oz. darkness chocolate chips
2 tbsp of milk
1 tbsp butter
parchment
a small pan
spatula
Two, three or more of these ingredients: sunflower seeds, raisins, coconuts, split almonds, dried bananas, cranberries; bacon bits (I make my own bits with turkey bacon) and pumpkin seeds.
Preparation:
Place 3/4 of the 12 ounce chips in a microwaveable dish. Pour in 2 tablespoons of your favorite milk. Good options include almond or coconut milk for good flavor. In the oven. Remove the microwave and add the butter and the remaining chips. Stir until blended.
Line pan with parchment. pour the melted chocolate over the paper and evenly using a spatula. Sprinkle the selected chocolate ingredients. I usually make two or three varieties, mentally dividing my pans into three. Another layer can be mixed with raisins and coconuts, another with bacon bits (my favorite), another with flowers and pumpkin seeds. Refrigerate for two hours. Break the bark into pieces (it will look like broken tree bark) and store in sandwich bags. Cold in travel.
Simple bindings
For a quick, healthy and substantial snack, consider a simple dressing. These wools will keep well and ensure that you get in your fruits and veggies for the day. They are also easy to store and eat.
Bacon, Turkey and Lettuce Dip – Wrap a few pieces of cooked bacon with the lettuce. Spread the seasonings on the deli turkey meats (if you like) and cover the lettuce with the turkey. Hold it with a toothpick if needed.
TURKEY AND PICKLE AMICTORIA – ALEX spear mice in turkey meat. You can add a slice of cheese or a sauce like ice cream cheese to add flavor to this treat.
Turkey, Cream Cheese and Cranberry Spread – Spread cream cheese on deli turkey meat. Add dried cranberries and roll for a delicious wrap.
Lake and Cheese Dip – Wrap a slice of apple in your favorite cheese for another healthy and tasty treat.
Store lunch island snacks in a bag or tote easy, convenient and safe. Take with you some water bottles with flavor drops/crystals for really fun food.
