Recipe: Double Chocolate S’mores Cakes

Smooth chocolate, gooey marshmallows, and crunchy graham crackers, s’mores have been delighting people for years. This modern twist on a classic treat is a simple and quick recipe that combines the indulgence of whoopie pie with the taste of nostalgic s’mores. The best part is, you only need six ingredients. Here is what you need;

  • 1 box chocolate cake mix
  • 8 tablespoons (1 stick) melted butter
  • egg 1
  • a cup of chocolate chips

  • 8-10 large swamps
  • I crush 10-12 grams, crushed for a minute

Here is what you do;

  1. Preheat your oven to 350 degrees.
  2. In a large bowl, use an electric mixer to beat the cake mix, butter and egg until a thick, moist dough forms (about 1 minute). Get excited about football.
  3. Shape the dough into 1-inch balls. I found it easiest to do this with your hands, but you could also use flour for round dishes. Place the balls on an ungreased cookie sheet, about 2 inches apart.

    Bake for 13-15 minutes. (Baking times may vary from individual ovens, but my cookies came out perfectly at 15 minutes). The cakes should still be a little soft when you bring them up. Maximus: It should not be kept from the oven. Transfer the cakes to a wire rack to cool for about 5 minutes.

  4. Put half of the cake onto the cookie sheet, rounded side down. Place one large marshmallow on each cookie – the flat end of the marshmallow should touch the flat side of the cookie so that the marshmallow does not roll when you move the cookie sheet. Keep the other half of the cakes on a cooling rack for now.
  5. Sprinkle the marshmallows with half the crushed graham crackers.
  6. Place the althaea cookies, covered, in the hot oven for another 2-3 minutes until they begin to melt into the marshmallows.
  7. Immediately press the rest of the cakes (which you put on a cooling rack) into the melted marshmallows to form a sandwich crust. While it is still hot, crumble the decorated cookies with the remaining crushed graham. Allow to cool completely before eating.
