Atkins Diet Recipes

In recent years, the Atkins diet recipes have become one of the most sought-after diet plans in America. However, the “no-carb” diet fad is a novelty and in some social circles is a thing of the past. However, the recipes that survived the Atkins diet were considered “fad” and became an “icon” in healthy eating.

I am an avid sea food lover, I am a huge fan of diet recipes and Dr. Atkins’ Quick & The Easy New Diet Cookbook‘s wealth of delicious recipes are full of nutrition and are sure to please any crowd. My favorite recipes are the Shrimp-scampi and red snapper with tomatoes and olives.

Alpheus Scampi is a healthy twist on an old dinner favorite. This Atkins food recipe calls for garlic, lemon, white wine and it’s delicious. The Red Snapper with Tomatoes and Olives Atkins diet recipe is the perfect combination of tomatoes, olives, onions and capers that will leave you wanting more after two helpings. This delicious Atkins recipe is ideal for those special parties or if you want to impress your friends without the carbs and calories.

Atkins Diet made: Alpheus Scampi

2 tablespoons of butter

2 tablespoons of oil

4 large cloves of garlic, minced

cup chopped fresh celery leaf

Lemon juice

½. Add garlic, celery, lemon, wine, pepper, meat, salt, pepper. Bring to a boil, lower the heat, and cook for 3 minutes. Add the shrimp to the skillet and cook, stirring frequently, for 5 to 6 minutes, until the shrimp are pink. Remove from heat. Atkins Diet recipe: Red snapper with hash browns and olives

1-tablespoon olive oil

small onion, chopped

1 clove of garlic, minced

5 Greek black olives, peeled and chopped

a cup of chopped tomatoes

2 tablespoons capers

2 tablespoons of butter

1 pound red snapper fillets

Heat the oil in a large skillet over medium heat until hot not smoking. Add the onion, garlic, and olives. Cook, stirring occasionally, for 3 minutes, or until the onion is translucent. Add the tomatoes, capers, wine, and red pepper flakes, if using. Bring to a boil, lower the heat, and simmer for 5 minutes.

Meanwhile, heat the butter in another large saucepan over medium heat until it stops foaming. Cook the snapper 2 minutes on each side, or until lightly browned. Transfer the snapper to the tomato mixture in the skillet, cover, and cook over medium heat for 3 minutes, or until the snapper is just heated through. Serve immediately. 2 and total carbohydrates: 16.3 grams with 8.2 grams* per serving.
