Chopped leftover roast beef, qty can vary but 2 cups is a good starting amount
1 can cream of mushroom soup
1 envelope dry onion soup mix
1 can mushroom pieces
3/4 cup half and half
2 tablespoons sour cream
salt and pepper
Mix ingredients except the half and half in the Crock Pot. Cook on low for 4 to 6 hours. Add cream, sour cream, salt and pepper 10 minutes before you want to serve the meal. If the beef stroganoff is to thick you can add a little water or you can add more half and half before serving over rice or noodles.

Beef Stroganoff Recipes: Crockpot Beef Stroganoff
2 to 3 pounds round steak
1 package dry onion soup mix
1 can golden mushroom soup
1 can tomato soup
1 cup fresh mushroom slices
8 ounces sour cream
Cut steak into strips. Stir together steak, dry soup mix, and soups in the Crock Pot. Cover and cook on low for 8 hours. If your crock pot cooks fast, you may need to cut cooking time to 6 hours so the meat will not have a burnt taste. Do not add sour cream until 20 minutes before you plan to serve the dish.
