CORNBEEF ROLL-UPS
This recipe is quick and easy. My mom made these for many years when I was growing up.
Yields: about 3 dozen
Ingredients:
1-8 oz package cream cheese (softened)
3-4 finely chopped green onions (whole stalk)
Small can chopped black olives
One pound deli-sliced corned beef
Cocktail-type crackers of your choice
Directions:
Mix cream cheese, onions, and olives together in bowl. On wax paper, lay one slice of corn beef. Spread about 2-3 teaspoons of cream cheese mixture on corn beef. Lay another slice of corn beef on top. From one side, roll up tightly. Wrap in plastic and repeat with remaining corn beef and cream cheese mixture. Chill for about 2 hours. After chilled, unwrap and slice rolls into ½ inch slices. Serve on crackers.
BACON-WRAPPED JALEPENO SHRIMP
This is one of my favorite recipes for something with a little kick.
Yields: 20
Ingredients:
2-8 oz packages cream cheese
20 jumbo shrimp
10 whole jalapeños
10 slices bacon cut in half
Directions:
Cut stem off of jalapeños and then slice in half top to bottom. Take out all seeds and membrane from inside. Shell and devein shrimp. Fill inside of jalapeños with cream cheese and then top with shrimp. Wrap with bacon and secure with a toothpick. Bake in the oven or grill till bacon is done.
BEST MEATBALLS IN THE WORLD
Meatballs are always an easy crowd-pleaser for any kind of party.
Yields: 20-30 meatballs
Ingredients:
2 lbs hamburger meat
2 eggs
Salt (to taste)
Pepper (to taste)
Minced garlic (about ½ a cup)
Minced onion) about ½ a cup)
¼ cup Worcestershire sauce
About 20 saltine crackers
Cooking oil (enough to fill a frying pan about 1 inch)
Directions:
In large bowl, mix all ingredients completely. Roll into balls about 1 inch to 1 ½ inch in diameter. Fry in oil on medium heat until bottoms are cooked, turn and continue cooking till cooked through. Set on paper towel-lined plate to absorb excess oil. Serve with whatever sauce suits your fancy or just plain.
FANTABULOUS MARGARITA
Every great cocktail party needs a good cocktail. Here is my original very best Margarita recipe. But maybe suggest a 2 drink maximum!
Yields: Depends on how much your party-goers drink! Makes about 6-8 glasses
Ingredients:
1 can frozen limeade
2 cups (16 oz) premium tequila
1 ½ cups Grand Marnier
1 cup orange juice
2 tbsp salt
Directions:
Make limeade (makes 2 quarts) per instructions in a gallon container. Add tequila, Grand Marnier, orange juice, and salt. Mix well. Serve over ice or add to blender with ice to make a frozen version. Warning: These are stronger than they taste. The orange juice takes the bitterness of the tequila away and the Grand Marnier makes it less tart and the salt makes it a little less sweet. Altogether, making a perfect margarita.
Enjoy your cocktail party, have lots of fun but be responsible. Remember, too, you can always clean up in the morning!
