Chicken Curry in a slow cooker or Crockpot may sound like an oxymoron, but trust me, it’s not. Once you’ve cooked your favorite chicken in the slow cooker, you’ll never fix it any other way; slow cooking makes the meat fall off the bone tender. The best thing about cooking chicken in a slow cooker/crockpot is that you can put everything in the fridge the night before and just put it on slow cooker / crockpot do all the work, literally just forget about it until it is time to eat.
Easy Curry Chicken Slow Cooker Style
serve 3-4
2 pound chicken pieces (thigh separated from the leg)
1 medium – large onion
1 stalk of celery
I diced tomatoes
1 clove of garlic, divided or crushed
1 cup chicken broth or 2 cups water
1 Tbsp dressing sauce
1 tsp pepper
Ps
1 scotch cap/habanera pepper (optional) remove the seeds if you are not a fan of hot food
1 Tbsp oil (optional – more)
1 – 2 potatoes (optional)
Chop the onion, celery, garlic and habanera pepper. When working with pepper it is best to wear gloves and remove the seeds if you are not a hot food the heat from the pepper seeds.
Put the chopped herbs in the bottom of the cup, and place them on top of the chicken pieces. You can add a little flavor by browning the chicken in a skillet with a little oil before adding it to the slow cooker or slow cooker.
Stir in the chicken broth or water and pour into the slow cooker/Crockpot. Can add tomatoes.
Cover the slow cooker/crockpot and leave covered until you finish cooking; every time the top is removed it slows down the cooking process by 30min. Cook on low for 8-10 hrs or on high for 4-5 hrs. You’ll start to smell the slow cooker looking chicken with the first 2 hours and you’ll know it’s done because the chicken will fall off the bone when you try to pick up the coin. Season the chicken with salt to taste. A couple of cut potatoes (bite size) can be added in the last hour or two if you prefer. Add the potatoes and cook until thick.
Chicken curry is typically served over rice with some diced tomatoes on the side. Once the chicken is whole (and it will be) any leftover soup or sauce, it’s delicious with bites or delicious bread for sopping up. Mmmm eats the best!
