Easy and Delicious Vegan “Meatloaf” Recipe

Finding a delicious vegan alternative to traditional meals can sometimes require a lot of internet research, numerous cookbooks and lots of experimenting. When it came to finding a recipe for vegan “meatloaf,” the recipes I found ended up being too dry and mushy, not tough enough or too soft. After some trial and error, I finally came up with a recipe that even non-vegans will enjoy!

Here is what we need:

1 12 oz. a ground vegan burger (I use Boca Meatless Ground Burger™ or Morning Star Farms Breakfast Prime Crumbles™)

a cup of old-fashioned oatmeal

a cup of onion

a cup of celery

the cup is filled with breadcrumbs

½ – 1 tablespoon (depending on how much garlic you want) fresh, minced garlic

1 teaspoons Ener-G Egg Replacer™ mixed with 2 tablespoons water (or another egg replacer, equivalent to 1 egg)

1 teaspoon salt

Black pepper (to taste)

a cup of ketchup

You also need a regular cake pan, a bowl, a pan (for sauteing) and tinfoil.

Here is what I do:

1. Preheat oven to 350 degrees.

2. Make the bread with the crust straight and leave enough on the sides to allow you to lift the finished cake from the pan.

3. Saute the onion and celery until just tender.

4. Sauté the burger buns lightly for about 1.5 minutes.

5. Cook a cup of oatmeal with a cup of water.

6. Mix everything, except the pot, in a bowl.

7. Press the mixture into a tinfoil lined tin and cover the top with ketchup.

8. Bake for about 45 minutes.

Notes, tips, variations and other fun stuff:

If you prefer a moister “meatloaf” with a little touch, add a cup of barbeque sauce.

If your mixture is not sticky enough, try adding a little more bread crumbs.

Try mixing 1/8 cup of ketchup and 1/8 cup barbeque sauce to the letter (instead of a cup of ketchup).

For a little more flavor, try the Italian bread cookies for the camp.

They serve a traditional “meatloaf” dinner with mashed or baked potatoes and vegetables, such as green beans; whether it is wheat or wheat.

If the meatloaf remains, it makes great sandwiches!
