Easy Breakfast Strata Recipes

A happy homemade breakfast brings the family together and starts the day on a pleasant and positive note. One way to incorporate several of these foods into one dish is by making a breakfast spread. A strata breakfast is a plate containing eggs, bread, cheese and other items such as meats and veggies. These easy breakfast cereal recipes will help you beat the breakfast meal any day of the week.

Make-Before-Layer Lunch

This breakfast spread recipe is perfect for weekday lunches or brunch when guests are invited, so you can make most of the work the night before. Old day bread works great in this recipe, and whatever cheese and herbs you have on hand.

Ingredients

10 slices of bread
1/2 cup bell peppers, diced
1/2 cup mushrooms, chopped
2 cups Cheddar cheese, grated
1/2 cup onion, chopped
2 cups ham, diced
8 eggs
2 cups of milk

Grease a 9×13 baking dish. Cut the five pieces of bread into pieces and spread them on the bottom of the plate. Spread the peppers and mushrooms over the bread. Top the vegetables with one cup of cheese. Break the rest of the bread into pieces and spread on another layer. Top with ham, onion and cheese. Beat the eggs and milk together and pour them into the pan in layers. Cover with foil and refrigerate overnight or up to 24 hours. When ready to serve, preheat oven to 350 F. Bake with foil for 35 minutes. Remove the foil and bake for 10 to 15 minutes until golden.

Low Carb Breakfast Layers

If you’re watching your carb intake, you can still enjoy a hearty breakfast. This breakfast strata recipe omits the bread but is bursting with flavor thanks to the ham, salty feta, savory cheese and flavorful veggies. For a spicy kick, add a small dash of green chilies to the can.

Ingredients

1 cup mushrooms, sliced
1 large green bell pepper, chopped
1-2 tsp. oil from olive trees
1 cup of crushed feta cheese
1 pound breakfast sausage
3 scallions, divided
18 eggs
Pepper to taste

Preheat oven to 375 F. Spray a 9X13 baking dish with nonstick cooking spray. Heat oil in a pan over medium heat. Add the mushrooms and sauté until softened, about four minutes. Spread the mushrooms on the bottom of the baking dish. Sauté bell peppers until softened, about five minutes. Peppers over mushrooms. Think feta cheese mixed on top of mushroom and pepper. Melt the stuffing in a frying pan and brown over medium heat. Spread a layer of stuffing on top of the feta cheese. Scatter the scallops over the sausage. Eggs with black pepper. Pour over the ingredients in the baking dish. Bake for about 45 minutes, or until the crust is firm and golden brown.

Crockpot Layers

Turn off the heat the night before and this breakfast spread recipe will be ready and waiting when you wake up in the morning. Experiment with different cheese and meat varieties to get even more breakfast layers for your dishes.

Coat the croquettes with nonstick cooking spray. Bread into cubes. Layer half in the bottom of the pot. Ham on top of a layer of bread. Top ham with 1/2 cup cheese. Sprinkle one tablespoon of onion powder. Spread the rest of the bread on another layer. Mix eggs, salt, pepper and hot sauce in a large bowl. Strain well and pour into the eye. Sprinkle the rest of the onion powder. Sprinkle with remaining cheese. Cook on low for three hours. Stand for 10 minutes before serving.

The recipe for strata can be refrigerated and refried well. Stock up on individual servings and kicking in the microwave prompt and healthy breakfast every time.
