Egg White Binding Substitutes
A recipe that calls for one egg white can be adjusted with agar powder. Agar powder is a vegetable-based gelatin product, according to Barry Farm. If you’re sensitive to algae products, you’ll want to avoid this vegan egg substitute since it’s made from red algae.
To work with agar, soak the agar in water for about 15 minutes. Then cook and stir until it dissolves, like gelatin. That’s cool.
To replace the egg, use a mixture of one tablespoon of water and one tablespoon of agar powder to make a substitute for one egg white.
Whole Egg Substitute
Make one whole egg substitute with two grams of baking powder and two tablespoons of water. Make sure to use baking powder and baking soda.
