Great Recipes Using Homemade Baking Mix!

In a previous article on Associated Content, I explained how I saved money by making my own Bisquick-type baking mix. I have had many readers for recipes using my mix, so here are some delicious recipes that I often prepare for my family using my homemade pastry mix.

Buttermilk Biscuits

1 c. mix
1/3 c. milk or water

Touch the biscuits:
Heat oven to 450 degrees.
Mix with a fork until the dough is smooth. Drop a large spoon (about 2 inches in diameter) onto a greased cookie sheet. Bake for about 12-15 minutes. Check for doneness after 12 minutes.
Makes 9 cookies.

Add-ins:
Adding ¼ c. Shredded cheese for this recipe makes the cookies yummy cheesy just like you would at a seafood restaurant. Add 1 tsp. Italian herbs and 1 tbsp. Fluffy parmesan cheese is good to make with pasta dough.

The songs roll:
Mix with a fork until the dough is smooth. Turn onto a floured board and mix several times, adding flour to keep the dough from sticking to your hands. Pat the dough gently into a 1-inch layer. Use a cookie cutter or a round drinking glass to cut out the cookies. Place 2 inches apart on a cookie sheet and bake for about 12-15 minutes. Check for doneness after 12 minutes.

Pacakes:

1 c. mix
1 egg
c. water or milk
1 tsp. sugar

Mix all the ingredients either by hand or with a mixer until only a small mass remains. Don’t over mix! The cane shakes from the med. grease a hot pan and cook until bubbles form on the surface. Turn and cook until golden brown. The grill is quite hot with a drop of water floating around on the surface.
Play around with the amount of water or milk until you find the consistency and thickness of the gravy that your family likes best. We tend to make our style thicker. Others seem to be thinner and thinner. In that case, add a little more liquid (like 2 or 3 tbsp.).
Makes an average of about 12 pancakes.

Add-ins:
c. dried blueberries
c. chopped walnuts or pecans
c. mini chocolate chips

Waffles:

2 c. mix
1 1/3 c. milk
1 egg
2 tbsp. Vegetable oil

Stir until mixed. Pour into a hot iron and cook until the smoking stops.
Makes 12 4″ waffles.

Hint: Waffles also benefit from the same additions as pancakes. They are also especially used as a substitute for filling with strawberries or any other type of fruit. Don’t forget whipped cream! My family likes them especially apple and cinnamon topped next week-day breakfast!


Streusel Swirl CoffeeCake:
(My son says this is awesome!

1 c. mix
c. milk or water
2 tbsp. Sugar
1 egg

Heat up to 375 degrees.

Stir all ingredients until combined. Spread the mixture in a greased 9″ round or 9 X 9″ brown pan. Sprinkle with 1/2 of the Streusel Topping and roll in the batter. Spread the remaining batter in the pan and sprinkle with the rest of the Streusel Topping. Bake for 20-22 minutes or until golden brown.
serves 6

Streusel Topping:
c cooking mix
c. You make brown sugar
½ tsp. ground cinnamon
2 tbsp. firm margarine or butter

Dry mix, then cut margarine or butter into the mixture until it becomes crumbly in texture, like cornmeal of course. A food processor is great for this, but two knives or a pastry cutter will work just fine.

Add-ins for Topping: ½ c finely chopped walnuts or pecans

Hint: I make a quadruple batch of Streusel Topping and store it in my freezer. This way, I always have a quick supply of CoffeeCake or a batch of Muffins when I’m in a hurry. Streusel keeps best in the freezer in a plastic pot or in a car bag. It’s also great to sprinkle ramen on top of the batter before you flip it, or on top of the shredded chicken pieces! My son calls these “Mom’s Pie Cookies”.

This also makes amazing coffee cake muffins! Just use a large or small muffin pan. Don’t forget to fill the muffin and top wells! (Or the Streusel Topping will stick to the top of the pan.) Don’t forget to fill the muffin 1/3 well, sprinkle with 1 tsp. topping, add the other 1/3 quart, and top with liberally sprinkled topping. Fill each muffin only about 2/3 full. Don’t be shy with the Streusel Topping! This recipe makes 12 regular or 6 jumbo muffins. Heat oven to 425 degrees. Add 2 tbsp. like Add the milk to the cup. Bake for 15-20 minutes.

Dumplings;

2 c. mix
2/3 c. milk or water

Stir the ingredients together to form a soft dough. Spoon a drop over the boiling soup. Reduce heat and cook uncovered for 10 minutes. Cover and cook another 10 minutes. Makes 10 dumplings.

Tip: Adding a teaspoon of powdered meat or vegetable mass to milk or water before mixing into the baking mix adds a lot of flavor.
The rest of the drop cakes to make large dumplings-just drop them into the soup and cook for about 10 minutes!

Add-ins:
½ tsp. Herbs from the Province
c. dehydrated vegetables (soaked in hot water first recipes in the Bisquick box. There is also a bisquick cookbook to buy or send for and there are lots of recipes on the Bisquick website that you can use, substituting the baking mix for the commercial one. Here are some great sites I found:
