If you have fond memories of the homemade chicken soup that Grandma used to make, you are in for a treat. Not only is this soup delicious and nutritious, it is filling as well.
Homemade Chicken Soup
~~~Ingredients~~~
~ 1 whole skinless boneless chicken breast
~ 2 medium potatoes, cubed
~ 4 medium carrots, sliced
~ 2 cups broccoli flowerets
~1 medium onion, diced
~ Wylers Better Than Bullion Chicken Base
~ Salt
~Black Pepper
~~~Directions~~~
~Add two quarts of water to a kettle. Add the whole chicken breast and the diced onion. Bring to boil and simmer until the chicken is tender and the onion is soft. Remove chicken and set aside to cool.
~Divide the broccoli into small flowerets. Peel and chop the larger pieces of broccoli, including the stem and add drop into the boiling water. You want these pieces to be tiny as they will cook up very soft and provide a nice base for you chicken soup. The flavor of the broccoli gives your chicken soup a distinct flavor that blends with the other ingredients.
~Peel and slice the carrots in 1/8 – ¼ inch slices. Add the carrots to the broth.
~Next, peel and cube the potatoes being careful to create uniform size. Add the potatoes to the broth.
~Measure and add approximately one tablespoon of Wyler’s Better Than Bullion Chicken Base. Adjust for taste. Adjust heat to a simmer.
~Cut chicken into bite size pieces and return to the broth.
~Add salt and pepper to taste. The chicken base already contains salt. Taste test you broth before adding more.
~Simmer until the carrots are tender, but firm enough to maintain good form.
Once your Home Made Chicken Soup is finished, it is time to make the Dumplings.
~~~Ingredients Needed~~~
~2 cups of all-purpose flour
~2 teaspoons of baking powder
~3/4 teaspoon of salt
~4 tablespoons margarine
~¾ – 1 cup water, or milk if preferred
~~~Directions~~~
~Mix flour, baking powder, and salt in a large mixing bowl. Cut in 4 tablespoons of margarine. Add ¾ cup of water or milk and stir well. Add additional liquid as needed to form a soft dough that can be dropped by a large spoon into the soup.
~Using a large spoon, drop the dumpling dough into simmering Homemade Chicken Soup.
~Cover kettle and simmer for 15 minutes. Do not remove the cover to check for doneness before the allotted time. This will cause the dumplings to “fall” and Instead of light fluffy dumplings, you will get dense dumplings. It is possible to cook the dumplings without a cover, but the results are better if they are covered.
~Remove dumplings and keep them warm. Allow you Home Made Chicken Soup to cool for a few minutes. Serve you soup in soup bowls with the dumplings on the side, with a little melted butter, if desired.
