Kasi’s Root Beer Float Cake Recipe

This was originally a recipe from a friend, and after a little tweaking I made it my own. A mixed cake mix makes this recipe easy while the root beer and vanilla gives it a special flavor. Our family is blessed with many summer birthdays and this is always the cake that is requested by the child on his birthday. My kids don’t eat a lot of cake, but they all agree that this is one of the best desserts they’ve ever had. My co-workers also often ask for this cake to share at potluck dinners or just as a treat. We recently attended a party where I was met at the door by a friend’s daughter wanting to know if I had brought my root beer and indeed I had cake! When we got home, my son took the remaining three pieces as a snack and the remaining three pieces for the next lunch that day. The hint of root beer in the batter and the sweet root beer frosting give this cake a deliciously different treat, and serving with a scoop of vanilla ice-cream is an unforgettable taste of summer any time of the year. Ingredients:

1 (18 to 14 ounce) package of your favorite white cake mix

2 and glasses of your favorite cold root beer

a cup of vegetable oil

2 eggs

2, mix the covers of them whipped (Dream Whip)

1 tablespoon vanilla extract

Directions

Preheat the oven to 350 degrees. Mix the cake mix, 1 cup root beer, oil, eggs with an electric mixer set at low speed for two minutes or by hand for three minutes. Pour into a greased 11 x 9 x 2 baking dish. Bake for thirty to thirty-five minutes or until a toothpick inserted around the center comes out clean. Let cool completely on a wire rack. The middle of the cake will fall off slightly as it cools, do not do this is normal. bake the cake lightly before frosting. For the topping, mix two envelopes of whipped cream with the top mix, vanilla, and the remaining cup of root beer with a mixer on high until the neck forms peaks. The cooler the root beer will brew the better. Frost the thoroughly chilled cake and refrigerate until serving. Store any leftovers in the refrigerator or they will melt. Enjoy!
