Are you a mom on the go all of the time and don’t have time to cook? I know how you feel. I work four or five hours a day. Then I homeschool my two kids. Then it’s off to baseball games, baseball practice, karate, or church. There is something every night of the week. So we started eating out a lot. That wasn’t good for the pocket. I sat down and thought about what I could cook that was quick and easy. I put together a list of stuff and started planning out my meals ahead of time. If you are a busy mom on the go, I’m sure you will find this list useful.
First on the list is beef stew. Beef stew is inexpensive and quick. You can put it in the crock pot in the morning when you get up and let it slow cook all day. Beef stew is not very expensive if you catch it on sale. I only put beef stew, potatoes, and onions in mine. You may want to add more. You can also cook the beef stew on the stove. You can cook it ahead of time and warm it up that night when you get ready.
Next on the list is salmon stew. Salmon stew is very simple to make. All you need is a can of salmon, fatback, and canned tomatoes. This is a five dollar meal. You can cook the salmon stew through out the day and heat it up that night when you are ready for it. All you do is cut up the fat back and then fry it. In a separate pot, empty your tomatoes and salmon. Then add your fat back to the pot. Let that simmer for about an hour. Then your meal is ready.
Next is vegetable soup. Vegetable soup is really easy and inexpensive to make. You may want to add other stuff to your soup but I use the basic stuff. I scramble my hamburger meat. Then I put it in a big pot and add two cans of corn, two cans of green beans, and three cans of tomatoes. Then I salt and pepper it and let it simmer for an hour or so. Then that night I just heat it back up.
Next is chicken and rice. Chicken and rice is very inexpensive and quick. You just boil your chicken until it gets done and then add your rice. Cover the pot with a lid and let it cook until the rice is done. Cook a vegetable to go with it and you have a nice meal.
The last one on the list is sandwiches and soup. Heat your favorite soup up and fix a sandwich to go with it. We usually fix chicken noodle soup and eat a ham sandwich with it.
These are fairly quick meals for moms on the go. I know that it is tough having to work, do activities, and cook. I hope this list helps you out some.
