When I was a child, my mother used to make really nice dinners in the afternoon. We would come home from church, and he would start cooking. One of my favorite meals was Chicken and Dumplings. She made it better than anyone, and I can’t even duplicate that meal.
These days when we have hectic schedules, it is much more difficult to cook a nice dinner, especially on weekdays. We often rely on Betty Crocker “Helper” flour, and their helper chicks are pretty good. Of course, my favorite is, once again, Homestyle Chicken & Dumplings.
Directions are easy
You can use chopped chicken, but I like to buy large packages of chicken from Costco. I cut them into 1 inch pieces. In another bowl I mix the cake mix with 1/2 cup of milk – then set aside. Then I gather 1 tablespoon of margarine (or butter, or oil) in a kettle and cook the chicken for 3 minutes. Add 2 cups of water, 2 cups of milk, and the prepackaged sauce mix and heat until it begins to boil.
After the liquid boils, drop the mixture into the sauce, cover and cook for 10 minutes. It remains in the lid to make the best tasting dumplings. Uncover and allow the sauce to cool.

Of course the taste of the chicken depends on the quality you use. If you like white meat, use chicken breasts. When my mom made her “marriage” dumplings, she used a box of Bisquick mix! (Bisquick is used for everything!). I have followed suit for years and have always made my dumplings with Bisquick. Well, guess who makes the crackers! General Mills! Betty Crocker’s Chicken Helper They also use their gluten-free bisquick pastry mix.
She doesn’t like this dinner as much as my mother’s homemade, but the soup capsule is quite tasty. It uses milk, margarine and my own fresh chicken, so it has more of a homemade flavor than some ready-made meals. The sauce is surprisingly good (and I don’t usually care for mixed sauces that come in a paper packet).
You can add variations of the flour by mixing in peas or potatoes, and you can sprinkle cheese on top if you want. The box says you can substitute 1 piece of ten ounce chicken, but I don’t recommend it, I think it will ruin the whole dinner.

Thoughts
If your chicken is prepped and ready to go, you can have a nice hot chicken and glom dinner in 15 minutes! That’s fast. The breakfast is also quite healthy, low in calories, (and you can cut fat and calories even further by using milk VERRO, milk disappeared, or margarine diet), low in sugar, and not too bad in the category of fat either. It’s very high in sodium though, so if you’re on a salt-restricted diet, you might want to skip this particular Chicken Paraclete dinner.
