Simple Poultry Marinades

Are you looking for a healthy, simple and cost effective solution for you and your family? Here are three delicious and great marinades for chicken and turkey that are sure to be favorites in your house.

Allia & Herb Chicken Marinade
As with most marinades, you need the acid and oil to allow your seasonings to penetrate your meat properly without spoiling the freshness or eating away at the flavors. To make a delicious garlic and herb marinade for chicken, start with 1/3 cup virgin or extra virgin. oil from olive trees. Try to use real oil and not substituted or flavored oil, as nutritional is very different. Mix in 1/3 cup of sherry or red cooking wine, depending on your taste.

You want both garlic and minced garlic for this recipe, adding about two teaspoons of each to the mixture and mixing once. Then you want to add some herbs; Fresh herbs chopped and washed once are always best, but dry herbs work in this marinade. I like to make a mixture of rosemary and basil, using 1 teaspoon for 1 teaspoon of each. (A teaspoon of salt and black pepper in this marinade tastes great.) Seasonings in this marinade, like any marinade, should be to taste.

Once everything is mixed together, coat your chicken and marinate in the refrigerator for 3 to 8 hours. This makes enough to marinate anywhere from 6 to 14 chicken breast cutlets. baked chicken using this method, or a small griddle works well too.

Lemon Peel Chicken Marinade
Lemon Chicken is a favorite on many tables in the American home. There are many ways to do it, but I much prefer perfectly marinated, lemon, juicy lemon chicken breast. For a simple lemon peel marinade, start with a cup of real virgin olives. Add about ¼ cup of fresh lemon juice, and 1/8 cup of water. Mix the liquids together, and gradually mix in a pinch of paprika, a pinch of celery, black pepper to taste, and a little garlic powder to break in with a fork. When you’ve mixed the marinade together, take a small cheese or veggie grater and grate a good, very large piece of chalky ore into tiny strips. Keep them in a separate bowl.

Marinate your chicken in a ceramic or glass bowl, pouring the marinade over it, and sprinkling the lemon peel on top, keeping it covered for 3-8 hours in the fridge. The preferred method of cooking chicken with this marinade is roasting or grilling.

Sweet Onion Turkey or Chicken Marinade
This is a sweet and delicious marinade for turkey or chicken. A large peeled and cleaned sweet onion, half a fresh red onion cleaned, two white table cane sugar; ½ cup extra virgin real olive oil and a cup of sherry cooking wine, season with salt and pepper. Cutting your onions is easy, just cut them in half (you only need half a red onion anyway), and thinly slice them using the flat surface of the onion as a base. Separate the onion into very thin strings.

Separate the oil from your olives, about half as much as you need in the pan. Heat the onions in a pan of oil until they caramelize, and then remove them from the heat. Let the oil cool before adding the rest of the marinade mixture. Marinate your turkey or chicken in the refrigerated mixture for 5-8 hours, turning every hour to make sure it’s moist. The preferred way to cook a chicken with this marinade is to grill it, and the best way to eat turkey with this marinade is that kind of thanks, even if it is cut. Enjoy!
