St. Patrick’s Day Green Food Recipes

If you’re looking for some ways to bring Irish spirits to your table, you’ve come to the right place. Over the years I have experimented with different green recipes for St. Patrick and here are my current favorites. Some are made for a while, and some are great.

Baked Parmesan

This recipe was made when I was on a low carb diet and I had pasta in mind. I decided to put my own chicken pasta filling. To my delight it came out fantastic. With a side of spinach linguine and with your favorite vegetable military.

4 large or 6 small breast chicken (exos, skinless) – crushed flat

15 oz ricotta cheese

3. Spread a decent amount of the spinach mixture over the chicken

4. Roll the chicken or fold it in half. Use toothpicks if your roll or fold is too thick to close.

5. Put the chicken in the cooking dish and pour the spaghetti sauce on top

6. Bake at 350° for 20 minutes

7. Sprinkle 1 cup of mozzarella cheese on top and continue to cook until the cheese is browned and bubbly.

8. Cut the chicken breast in half when serving to reveal the beautiful green filling

FreshBroccoli Salad

This crock pot recipe at work. I don’t normally like raw broccoli, but this looked interesting and I didn’t want to hurt the feelings of my co-worker who made it so I gave it a try. It has always been my favorite. Although it can be expensive to purchase all of the items if you don’t already have them on hand, these are the things (except the cauliflower and turkey) that you can save for the next time you’re ready to make it. Salad again…I guess it won’t be long.

1 large head of fresh cauliflower

10 slices of cooked turkey bacon and crumbled

¾ Raisins

½ cup of cashews

1. Cut the tops (florets) of the cauliflower into bite-sized pieces

Green Dream

This recipe has been a favorite in my family for as long as I can remember. My Mom has made this since I was a little one and now she makes it for the grandkids who won’t let her go on vacation or go out together.

16 oz container of small cottage cheese

Horrible Green Tortellini Salad

The topping is awesome when croutons are used and this salad is the best meal to try this crouton alternative. After rummaging through the cupboards in a desperate attempt to find croutons, I decided to give the stovetop a go. I’ve always been used to salad.

1 bag of iceberg lettuce

9 oz package of Buitoni® spinach cheese tortellini (found in the refrigerated section

Creamy alfredo sauce, you could do both if you are really festive you’re feeling it!

12 oz fun pasta (spirals, shapes, roughs or whatever

1 package refrigerated fully Cooked Chicken Breast (removed or diced

Alfredo Sauce

¼cup butter

1 cup heavy cream

2 cups of parmesan cheese

1 clove of minced garlic

1. Melt the butter in a pan

3. Reduce the heat, add the parmesan cheese and stir until the parmesan melts

Tomato soup with bagels and green cheese

If you want a super lively dinner with a touch of green, this can be ready from start to finish in about 15 minutes.
