Mention “Buffalo wings” to most people, and a vision of fatty, deep fried chicken smothered in gravy and blue cheese dip comes to mind. It’s delicious, but not very healthy – and who wants to work a hot, messy deep fryer in the wonderful summer weather?
Of course not – I want to be outside, cooking on the grill and enjoying the sun and fresh air. So, here is a way to enjoy a short variation in the delicious taste of Buffalo wings, freshly grilled.
Grilled Buffalo Wings
You will need it;
Chicken wings (approx. 1/2 to 1 pound per person, depending on appetite)
Frank’s Red Hot Cayenne Pepper sauce (if not available in your area, any cayenne pepper sauce will work – but Franck’s is by far the best)
honey
Butter (a stick tip needed for about every 2 pounds of wings)
Chicken Broth
Oil from olive trees
STEP 1: Describing the wings
Don’t, say, the bagged frozen wings that most grocery stores sell, commonly known as “Party Wings” – they are small and nowhere near tender enough to give you the results of this recipe. If you have access to a real grocery store, ask for “jumbo cut wings” – if not, your best bet would be to buy Fresh whole wings at the grocery store…you can cut them into pieces or just cook them whole, just fine either way.
STEP 2: Marinate / Pre-heat
You will need about 4 cups of very hot water, 2 cups of syrup, and 1/2 cup of hot sauce for the wings . Combine the ingredients and marinate the wings for about one hour. (Add a little extra water or broth if all the wings are not covered.) Also prepare your grill – you want the heat to be around medium.
STEP 3: Make the sauce
While the wings are marinating, you will make the wing sauce. The ratio of hot sauce to butter determines whether your sauce will be hot, medium, or mild. For the medium, use 1 stick of butter with about 1/2 cup of hot sauce. Reduce or increase the flavor of the yeast sauce. 1 stick of butter will make enough sauce for about 2 pounds of wings. For each stick of butter, add 1/4 cup of honey. Whisk all the ingredients together until well combined – your orange sauce will be red, depending on your heat level.
STEP 4: Grill the wings
Brush the wings with a light dressing of oil, place on the grill. Turn brown often on each side to desired color (I like thin char wings on them). Grilling time should be about 15 minutes, depending on the size of the wings – pierce with a knife or skewer to test doneness.
STEP 5: Coat the wings in the sauce
There are two methods available to you for this step. The traditional method would be to place the wings in a sealed container for a while, pour in some sauce for the wings, and shake the sealed container until the wings are completely covered in the sauce. If you prefer, the wings can also be served plain with dipping sauces on the side.
VERSE 6: Serve
TraditionalBlue buffalo wings is served with a dip or cheese dressing, and it can also be used here. But, to suit the summer feeling, these wings are often served with fresh salsa or a light vinaigrette. Of course, they are delicious without any decoration, perfectly. Reserve some extra Frank Red Hot for those who prefer a little more heat, and some celery and/or parsnip sticks to cool the tongue in case the sauce gets too hot!
