The problem with many diabetic cookie recipes is that they contain artificial sweeteners. Here are two fantastic diabetic cookie recipes that are all natural, super healthy and great tasting.
Both diabetic cookie recipes include pureed beans. Use either cooked or canned white beans (such as navy or great northern) strain and puree them in your food processor or blender. The consistency should be like creamed shortening with sugar. If yours is too thick, add 1 to 3 teaspoons of liquid left from beans or water.
*Great Tip: If a cookie recipe calls for ½ cup butter, consider replacing it with 1 cup pureed beans. Beans will increase the fiber and nutrition of your cookie while lowering fat content!
Diabetic Cookie Recipes: Applesauce Raisin Cookies
2 1/2 cups whole wheat flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
1/2 cup chopped nuts (optional)
2/3 cup raisins
1 cup pureed white beans
1 cup frozen apple juice concentrate (thawed)
1 cup unsweetened applesauce
1 teaspoon baking soda
2 beaten egg whites
Preheat oven to 375 degrees. Spray cookie sheet with non-stick cooking spray.
Combine flour, salt, spices, nuts and raisins into large mixing bowl.
In another bowl, mix apple juice concentrate and pureed beans, until smooth and creamy.
In a third bowl combine applesauce and baking soda, stir well.
Finally after beating egg whites, combine the contents of all three bowls to one, beginning with the eggs, applesauce, and creamed mixture. Once blended slowly add dry ingredients until mixed well. If cookie dough is too wet, add more flour.
Drop dough in teaspoonfuls onto cookie sheet, bake for 12 to 15 minutes. Don’t over bake. Makes about 5 dozen cookies. 1 cookie is about 53 calories
*Great Tip: As an experiment use apple juice concentrate as a replacement for sugar and pineapple juice concentrate as a replacement for brown sugar in other dessert recipes. Make sure to increase the amount of flour to keep your dough at the right consistency. Replacing refined sugars with juice concentrates boosts the nutrition of your favorite desserts.
Diabetic Cookie Recipes: Chocolate Chip Cookies
2/3 cup pureed white beans
2/3 cup unsweetened applesauce
2/3 cup frozen apple juice concentrate, thawed
2/3 cup frozen pineapple juice concentrate, thawed
4 egg whites
2 teaspoons vanilla
4 to 4 1/3 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chocolate chips
Preheat oven to 375 degrees. Spray cookie sheet with non-stick cooking spray.
Combine pureed beans, applesauce, concentrates, egg whites and vanilla. Slowly add remaining ingredients. If dough is still too wet add more flour.
Drop cookie dough onto cookie sheet in round teaspoonfuls with a 2 inch spacing. Bake 8 to 10 minutes or until light brown. Remove from cookie sheet after two minutes. Makes 4 dozen cookies.
1 cookie is approximately 71 calories and 1 gram of fat. For a healthier cookie replace chocolate chips with raisins.
